Mmm... the flavor blast of curry mixed with the sweetness of coconut, apples, and raisins? Sign me up.
Our ingredients: raisins, apple, celery, shredded chicken, shredded coconut (sweetened), cumin, curry, ground ginger, fat-free plain greek yogurt, and ground thyme.
To start off, I used leftover boiled chicken from a couple days ago. Before shredding, I popped it the microwave for a little bit. The warm chicken fell apart easily when I pulled it between two forks.
Of course, I was then surrounded by all sorts of pets, lured by the smell of tasty chicken. If this happens to you, just try to ignore all the eyes you feel staring at you. Maybe even throw them a couple pieces if you're feeling generous!
Now, go ahead and chop up your apple and celery. You want small pieces, but don't go too crazy. A little bit chunky is good. Combine the chicken, apple pieces, celery, and raisins in a bowl and set aside.
How cool is this? Just open your yogurt and VOILA! You magically have a convenient little mixing bowl. Throw in your spices and stir, stir, stir.
Combine the two, making sure everything is well mixed. You can eat this right away, or throw it in the fridge for later.
Spoiler: I couldn't wait.
Place 1/2 a cup of chicken salad on a fresh, large lettuce leaf and make it pretty with 1 tsp of shredded coconut.
Three basic flavors shine in this dish: savory (curry), tangy (yogurt), and sweet (apples, raisins, coconut). The celery and apples add a really nice crunch, taking the place of high-calorie nuts. Although, you could definitely throw some in if you want. Personally, I think that sounds delicious. If the tangy yogurt throws you off, you could use lite mayo instead (or Nayonaise, if you have it). I also thought about using grapes instead of apples. It's up to you!

Lettuce Wraps
Makes four 1/2 cup servings
4 oz Chicken (shredded)
1 c. (8 oz) Fat-Free Plain Greek Yogurt
1/2 c. Diced Apples
1/4 c. Chopped Celery
2 tb Raisins
1/2 tsp Curry Powder
1/4 tsp Cumin
Dash of Ground Ginger
Dash of Ground Thyme
Salt and Pepper to taste
4 tsp Sweetened Shredded Coconut
4 large lettuce leaves
1. Combine shredded chicken, diced apples, chopped celery, and raisins in a bowl. Set aside.
2. Open yogurt, add spices, and stir.
3. Add yogurt mixture to chicken, mix well.
4. Put 1/2 c. of chicken salad on a large lettuce leaf and top with 1 tsp of shredded coconut. Enjoy as a crunchy, satisfying wrap!
